I’ve been seeing these little things in my newsfeed and all over Pinterest for what seems like an eternity. So, I gave in and figured I too would try to make a batch of energy balls. And they were so delicious.
I started out on Google since that’s where I start every thing. I wanted a recipe that wouldn’t take me too long and didn’t have ingredients that I would never use again. I stumbled upon the blog Eat Drink Love. ( http://eat-drink-love.com/2013/04/no-bake-energy-bites/ )
Here’s what I ended up with. There were 15, but I didn’t think to take a picture until we had already dug in.
The recipe is actually very simple and toddler approved.
Does he look energized or what? (We don’t typically sit with our feet on the table… And despite how it looks he is buckled into his seat… )
So with all the ingredients I used, (1 cup oatmeal, 1/2 cup peanut butter, 1/4 cup agave nectar, 2 Tbsp flaxseed meal, 1 Tbsp chia seeds, 1 tbsp coconut oil, 2 tbsp chocolate chips, 3 Tbsp dried cranberries, 3 Tbsp pumpkin seeds) they round out to about 130 calories a pop.
Basically you just mix all the stuff together, let it sit in the fridge for a while, and roll them up.
Seriously. If I can do it, you can too.
